Curried Butternut Squash and Chickpea Traybake

A simple and tasty traybake packed full of flavour

Serves 4

Prep: 10 minutes

Cook: 40 mins

Ingredients

3 tbsp Olive Oil

1 Butternut Squash, cubed

large red onion, roughly chopped

1 tin chickpeas, drained

1 courgette, cubed

1 tbsp garlic

1 tbsp ginger

1 tbsp curry powder

1 tbsp dried coriander

salt and pepper

Method

Step 1

Preheat the oven to 180C/160C fan/Gas 4 and lightly oil a baking tray

Step 2

Add all the ingredients to a large baking dish.

Step 3

Mix well so they are evenly coated in the oil and spices. Add a little more olive oil if required

Step 4

Bake for 40 minutes, stirring after 20 minutes

Step 5

Serve topped with Greek yoghurt on its own or with a green salad.
